THYME MARINATED GRILLED BEEF WITH PESTO

Beef can be seasoned in many ways, and here is a play with a few herbs - thyme for the marinade and basil for pesto that is served on top of the grilled beef. A simple and quick recipe.

4 servings:

4 fillets of beef or other meat of your choice
1 handful of thyme leaves
2 garlic cloves
1 tbsp olive oil
salt, pepper

Pesto:
a handful of basil leaves
50 ml/3 tbsp toasted pine nuts
50 g/1.7 oz parmesan cheese
1/4 garlic clove
salt, pepper
olive oil

Make the marinade first. Mix thyme, garlic and olive oil, preferably in a food processor. Pour the marinade over the beef, season with salt and pepper, and let stand for 15 minutes or more, while you prepare the pesto.

For pesto, simply mix all ingredients in a food processor. Add as much olive oil as needed so you get a smooth paste. Season with salt and pepper.

Grill the marinated beef in a hot grill pan, first about 2-3 minutes on the first side and then in a slightly reduced heat for about 7-8 minutes. The timing should be according to your prefered meat doneness. For rare it takes even lesser time. Check the doneness by touch, or with a thermometer.
