SCALLOP APPETIZER
This scallop recipe is really simple, and at the same time delicious. It is important though to have fresh ingredients here, otherwise the flavor will be dull. You can really experiment with this one, especially when it comes to dressing and seasoning of the scallops.
4 servings:
10 potatoes, cooked in salted water and sliced
8 scallops, nuts cut into two horizontal halves
3 tbsp creme fraiche
2 tbsp chives, chopped
2 tbsp basil, chopped
juice of 1/2 lemon
salt, pepper, curry powder
olive oil
1 garlic clove, crushed
some butter
To make the dressing, mix creme fraiche with chives, basil, and lemon juice, and season with salt and pepper. sauté the potato slices in some olive oil with crushed garlic in it, and add some butter at the end. Remove from heat and set aside. Now quickly do the scallops: season them on both sides with salt and pepper and curry, and fry on moderate heat in olive oil (in a nonstick pan) for about 30 seconds on each side. Now arrange the entire dish on a plate: you can lay out some basil leaves on the plate, place a few potato slices on one another, and place the scallop on top. Pour some dressing on it and around the scallops. Garnish with some basil leaves.
