ROASTED BACON WITH LEEKS AND POTATOES

This is a very simple recipe, perfect for the colder months of autumn. You can vary it from time to time by using different sorts of bacon. Otherwise there's not much to say about it, apart from being a delicious and simple dish!

4 servings:

2 leeks
3 potatotes
250 g/8 oz bacon
2 tbsp olive oil
salt, pepper
1 sprig of thyme
2 tbsp butter

Heat the oven to 180 C/350 F. Prepare the leeks by removing the outer leaf, cutting it in half lengthwise, rinsing it from all dirt in tap water, and then slicing into half-circles. Prepare potatoes by peeling them (unless you like the taste of skin) and slicing them. Slice the bacon into smaller bits as well. Now, put everything into a pan with olive oil, over a medium heat. Season with salt, pepper, and thyme. Cook until the potatoes start to get lightly brown. Then put the mixture into an oven-proof pan and bake for about 15-20 minutes, until the vegetables are tender. Serve with a piece of butter on top. Season more if needed.
