POTATO GALETTES WITH FRENCH HERBS

This is one classic dish, or rather accompaniment to other dishes like meats or fish. The idea is coming from Rösti potatoes, although here the flavor of the potatoes is enhanced by the traditional French herbs - chives and parsley. They just go amazingly well with potatoes.

4 servings:

500 g potatoes
2 onions
1 garlic clove
a handful of chopped parsley and chives (or use less if you want)
1 egg, beaten lightly
1 tsp flour
salt, pepper
olive oil for frying

I believe it is best to precook the potatoes, otherwise it will take forever to fry them and they just don't taste as good as if you precook them. So, cook the potatoes in water until you can stick a fork in them halfways, but no longer. Then drain the water, put them back on a low heat stove and let the rest of the water evaporate. Let cool.

When potatoes are cool, grate them and also grate the onions. If you like, you can grate some cheese in there as well. Then finely chop the garlic and herbs and add them to the potatoes. Lastly, add egg, flour and season with salt and pepper. Form potato cakes draining most of the water. Fry them in a medium hot pan until they are golden brown on each side. Remove from the heat, drain the oil on a paper towel, and serve.
