OYSTER SOUP WITH SALT CUCUMBER
This is a simple but delicious recipe for those of you who don't like to eat raw oysters. It combines oysters with salt cucumber, which I feel go well together.
2 smaller servings:
4 oysters
400 mL/13.3 fl oz vegetable stock (home-made!!!)
50 mL/1.7 fl oz cream
pepper
4 salt cucumbers, roughly grated
Open the oysters and pour the inner parts into a bowl, together with the liquor. In a pan, heat up the stock with the oyster liquor and cream, add cucumbers and cook without boiling for 2 minutes. Season with pepper and add the oysters and cook for 30 more seconds. Then remove from heat and serve immediately.
