TANDOORI CHICKEN
As well as I can remember, tandoor is a special oven, or actually a "mud" pot, which is used for baking at 180 C. You don't need that kind of equipment though. You can make tandoori chicken in an ordinary oven, using the same temperature. Remember that you need to marinate the chicken for about 2 hours, otherwise the meat will not be so succulent and tasty.
4 servings:
4 chicken breast fillets
for the first marinade: 1 chopped chili pepper and juice of 1 lime along with the rest of the lime, salt, pepper.
for the second marinade: 1 chopped chili pepper, 1 tbsp freshly grated ginger, 2 finely chopped or grated garlic cloves, juice of 2 limes, 1 tsp sambal oelek (if you want to make the dish hot, otherwise don't use it), 1 tsp garam masala, 100 mL tandoori bbq sauce or 2 tbsp tandoori spice, 2 tbsp olive oil.
to complement: cooked rice, some nice veggies
First, put the chicken fillets in the first marinade and put into refrigerator for 1 hour. Then, move the chicken to the second marinade, put in the refrigerator for another 1 hour. Preheat the oven to 180 C/350 F. Place the marinated chicken along with the marinade in a baking pan for 12 minutes, or until the chicken is ready (will depend on the size of your fillets, if you've sliced them etc.). Serve with rice and veggies.
