CROQUE MONSIEUR

This is a simple and tasty sandwich that is so good to have for breakfast or as a snack. The key to a good croque monsieur is a good quality tasty cheese, then you can vary the fillings however you wish. Here is a classic version with ham and mustard.

4 servings:

150 g/5 oz Gruyère cheese
200 g/7 oz sliced ham or smoked turkey
8 slices of white bread, with cohesive crumb
1 tbsp Dijon mustard, or more if you like
100 g/a stick of butter

Prepare the sandwich by spreading the mustard on both pieces of bread (on one side) and then placing ham and cheese in-between the bread slices, so that there are two layers of cheese wrapped around the ham layer. Put some butter in a pan, and on moderate heat, fry the sandwich in the pan until golden brown. Remove from the pan and serve immediately while still hot. Easy!
