CHEF'S SALAD
This is a salad that mixes different kinds of meat with different cheeses, and is therefore quite filling. If you serve it as an appetizer then don't serve too big portions. And it can be eaten as a lighter main course also. It's one of these salads that has it all, both culinarily and nutritionally speaking - meat, cheese, egg, veggies, vinaigrette. Try it!
4 servings:
400 g/13 oz mixed salads
10 ham slices
10 salami slices
4 eggs, hard cooked and cut into wedges
60 g/2 oz Gruyère cheese, grated
60 g/2 oz Cheddar cheese, grated
30 g/1 oz parmesan cheese, grated
2 tomatoes, cut into wedges
1/2 cucumber, diced
100 mL/3 fl oz red wine vinaigrette (see HOW TO)
some chopped chives and parsley for garnish
Either arrange the meats, cheese, and eggs on top of the mixed salads, or mix salads, meat, cheese, tomatoes, cucumber, and arrange the eggs on top. Drizzle with vinaigrette, and garnish with chives and parsley. Serve this salad immediately or it will go bad.
