RISOTTO MAKING
We already covered the how-to of making risotto in our HOW TO section on this webpage. To provide some quick hints on risotto making though, let's summarize the main prerequisites.
1. A good home-made stock. This is crucial. You never get a fine flavor from the commercial stock cubes. Make your own stock and you can keep it in a freezer for a month.
2. Stirring. This ensures that the rice takes up as much flavor as possible, and that the starch in blended in the risotto.
3. Butter. At the end of the risotto making, you need to add some butter to it to make it boost its flavor and creaminess.
4. Seasoning. Don't forget to finish the risotto off with salt and pepper at the end.
