When frying something in butter you need to be careful with the heat and with the amount of time that butter stands in the heat. Too long time will burn the butter (unless you use clarified butter) and your dish will be destroyed. However, if you still need to fry something really good and get a nice brown coat, start to fry your food in some oil instead, and then, at the end of cooking at the butter and let it melt and cover the food. If you let the butter brown just a little bit, it will add a nice nutty flavor to the dish. A combination of olive oil and butter works well when it comes to giving fried food an unforgivable taste.
